In the late 1890's,sixteen year old Albina Kormornik arrived in Pueblo Colorado from her native city of Bratislava, in today's Slovak Republic. With her she brought a heritage of family recipes. One special recipe was baked during the holidays as a gift of love for family and friends. It is called Potica (pronounced Po-tee-sa, and also called Kolachi, Povitica, or Nutbread). The thinly rolled gourmet sweet bread dough with a moist walnut filing.The old world taste can best be described as soft and rich--so rich and delicious that it is easy to understand why this fine food recipe has endured for hundreds of years.

The success of Mrs. Mauro's Kolachi began with a delicious recipe. It continues today with commitment of the Mauro family to maintain the original ingredients. The ingredients include California light walnuts, flour, sugar, milk, butter, eggs, salt and yeast and contains no preservatives. Each loaf is hand rolled with wooden rolling pins to an almost transparent thickness. With one pound of California light walnuts per loaf the walnut filling is applied with flat plastic spreaders. Each loaf rolled into a tight roll and placed into decorative holiday pans. After one hour in a temperature controlled proof box, the Provitica is then baked. This is accomplished in Denver, Colorado by members of Emily Mauro's family. Each loaf is brushed with butter while still hot and then quick frozen. It can be thawed and re-frozen without harm to taste or texture. Serve it as a dessert by the slice with whipped or ice cream topping. It is also great by itself, with a cup of coffee or glass of milk.
