Stone Ground Flour, No Additives or Preservatives

I would like to find a supplier of flour with out being fortified with iron. You say "nothing added, nothing removed" Does your flour have added iron? Please let me know; it would be fantastic for people with Hemochromatosis.

Dear Mr. Hardy:

Mountain Plains Stone Ground Flour's comment "nothing added, nothing removed," means exactly that. What goes in the top of our mill is what comes out the bottom. We add no iron, no preservatives, nothing. The only product we sell which has some additives in it is our whole wheat pancake mix. That has 50% white processed flour and 50% whole wheat flour because most people do not care as much for complete whole wheat pancakes - although the taste is good, they tend to be somewhat heavy. We do make up such mix for folks from time to time who want completely whole wheat pancakes.

Otherwise, all of our products have nothing added to them. You need to know also that our products, with the exception of buckwheat items, are not organic. The wheat, corn, and rye is raised in ground which has been prepared with fertilizer of different types. There are no added fertilizers or growing agents once the wheat, corn, or rye is planted but the ground is prepared with a small amount of fertilizer so we cannot say it is completely organic. Organic wheat, corn, and rye is available to us but the cost is about double of non organic and so that will drive up the cost of the finished product also.

Another thing - wheat, like corn, rye, and buckwheat, does have trace amounts of iron occurring naturally. So our products cannot be said to be totally iron free. But we definitely do not add anything. For this reason, if you purchase our products, you should keep the unused portion of the flour or mix in your freezer. Left in the cupboard it will go rancid within a few weeks since we add no preservatives. Put in the freezer it will easily last a year or longer.

This long winded explanation was probably more than you wanted. But I wanted to be very clear about our products. We hope to hear from you.
